Can't understand though why the guy in the left seat would use his left hand for the throttles or am I not following it properly

Garry, Victor throttles are not mounted centrally, but outboard of the pilots - i.e. to the left of the Pilot (left seat) & to the right of the co pilot (right seat), by the thigh, so the co pilot on the day was/should have been controlling the throttles with his right hand.
