Things do produce colours in space, eg. sulphur is yellow, as seen by us on Earth
The quote which I posted refers to the type of imagery employed by the JWST in its current configuration, where it is looking backward in time and using infra red to do so.
Whatever various space cameras show us, the images are certainly fascinating, and I did not intend to subtract anything from Nigel's reaction to them.
We definitely should not refuse to look at something because it is not "really accurate." In fact, as we know, every moving film or computer image we observe (including flight sim) is a series of still images displayed rapidly to create a replica of movement.
