I haven't installed the arrestor cable/ catapult add-on so I tried a normal takeoff and ended stalling her as I came off the deck.

I've installed the Ark Royal but for the life of me she doesn't appear in FSX at all.

I take it that by Ark Royal, you mean the Flying Stations Ark Royal IV

The FSX version works a treat (I say that having asked Ben to make a traffic file for me which he kindly did)

Are you on SP2 or ACC Brian? Until I binned SP2 and bought ACC, Ark IV spit FSX to the desktop for me.. which was the only real reason I bought ACC!

More importantly... Does the Ark not show up on one of the established routes? Have you tried using her with Ai Carriers?

Yes, I'm running FSX w/SP2. The Ark doesn't appear on her scheduled routes. In particular I used the Gibraltar route where she appears at 8:00am local time. I even installed the custom-made 'flight' (found on the Ark support forum) but still no Ark. I'm using AICarriers2 but the Ark does not show on the list of available ships. Dave's suggestion of purchasing Acceleration sounds like a good one. That'll probably cure some of the other SP2 related issues I've seen.

Paul, it was decided as Acceleration launches the Swordfish at a ridiculous speed not to have cat capability in accel, what you need to do on free take off is not to climb until 70 kts at least and even then a gentle climb.
Edit taking another look that ship does not appear to be moving ? you need some wind over the deck and take a longer takeoff run there is miles of deck there.
