Yeah, but do they have a cure for PMT, hangovers, or the common cold, that's what I want to know.

Yes, I think they could have a cure for all ills - if one is the object of their ordnance!!!

Great film, but does this make the LSO redundant?
Who on Earth (or in the sky for that matter) is He/She going to wave to?

He's still very useful in case something on the deck fouls, the computer is unable to compensate for deck heave, or something else externally that they can't see downstairs in the Drone Control Room is wrong, same as he does now. There's still a person "flying" the UCAV, even if not doing so manually, they are monitoring the system and have the ability to command an abort if needed. Also, you saw the ground control packs that they have as well, so I would think the LSO himself or one of the Assistant LSO's would have one and able to command the wave-off if the LSO doesn't like what he's seeing.

As it is, you can see the computer's not perfect. It got an OK-2 on the first landing (meaning it landed a little short and grabbed the 2nd wire) and the second was a OK-3 (landed on target capturing the 3rd wire).
