So that's Mahi. Definitely a delicious fish, er whale.
Here's a simple Mahi recipe that Mrs. FlyTexas and I have enjoyed.

Grilled Mahi with Avocado and Corn Salsa

4 Mahi Mahi fillets
2 tablespoons olive oil
2 teaspoons ground cumin
2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper

Salsa
2 fresh ears of corn shucked and removed from the cob
1 poblano pepper - seeded and chopped
1 firm ripe avocado, cubed
1/3 cup chopped purple onion
1 tablespoon sugar
1 tablespoon vinegar
1/2 teaspoon salt
1/4 teaspoon pepper

For the Salsa:
Combine all ingredients in a large bowl. Chill while fish is grilling.

For Mahi:
Heat grill to medium high.
In small dish, combine olive oil, cumin, chili powder, salt and pepper.
Brush on to uncooked mahi fillets.
Grill about 4 minutes on each side (depending on thickness of the fillet), until cooked through and fish flakes easily.
Serve with Salsa.

Brian :)

That sounds delicious, but I doubt I'd find Mahi Mahi in the UK.

Would any flaky white fish be a substitute, or does Mahi Mahi have a particular flavour?

Looks like Cod would be a good substitute. :)

Thanks, Brian.

After posting, I did wonder whether it was possible to get Mahi Mahi in the UK and a web search showed that it is. However, I'm not sure if it's been frozen, which I never think is a good thing for fish.

London :-O :-O :-O I wouldn't go there if you paid me. I hate the place and avoid it like the plague.

I found several links to restaurants in Birmingham (a much, much nicer and friendlier city), serving Mahi Mahi as well as it being available from Birmingham's famous Bullring Indoor Market.

Or you could plan a spring trip to Florida and catch one yourself, or let the missus have all the fun while you relax on a chaise lounge drinking a cold one.

Most locals here pan fry the fish in butter and oil, seasoned with sea salt and pepper.
Or blackened on a grill seasoned with a blackening spices.
simple

Rice and black beans, plantains and a garden salad.. or cucumber, salad, macaroni salad, Cole slaw, ... However you like.. ;)
