Not sure how long the RWYs at Norfolk Island is ?
Norfolk Island airport had handled Norfolk airline's 737-200s.

Aharon , that should be good as an en-route alternate for a non ETOPs route across the Tasman .

For a delivery flight you should not have to worry about ETOPs. Aloha Airlines used 737-200's in Hawaii and its 2000nm from California, the closest land they would have had to fly from. Which is more than double the distance from Australia to New Zealand.

B12 , That's why I mentioned ...

'' Delivery flts could perhaps be classified as 'Private , and the 1 hr rule ignored '' .

Still an interesting challenge , even if the stepping stones [ ETOPs 'wordology ] are much further apart , and what your own attitude to risk is .
Ernest K Gann , in ' Fate is the Hunter ' [ still an excellent intro to airline flying today ] , would have faced this all the time in his DC3s , at the beginning of the US involvement in WW11 .
More recently 2 friends had ETOPS shutdowns . 1 a 757 , 2 hrs to Gander . 2nd a 767 best part of 3 hrs to Goose Bay , said it concentrated their minds . A 3rd even woke up somewhat when mid Atlantic out of JFK , 1 of his 744 engines ran down , and he had 3 left ..
And these are a/c , designed for long range ops and nav. Back in early '80s a Merchantman [Vanguard] went off to Palmdale to pick up 18 tonnes of Tristar spares . The Flight planning Superintendent in BA Airtours [ the only Nav. left in BA ] had to quickly brush off his Navigators licence to shepherd them over .. Even 'tho they went Blue Spruce , the 'Bois were not long range experienced .
