The Colonists probably would call it blood sausage but I don't think I have ever seen it for sale in my local Safeway! Not sure how it gets its black colour, but there is also red pudding and white pudding.
Joe, 'cos it's blood (and a bit of cereal and no doubt secret ingredients). It's not truly black until it's cooked (again). Anyone tried it raw? It has an interesting flavour but must admit I'm not that keen.
